Lentil Chili

If you’re looking for a hearty, warming, and plant based meal look no further! Flavourful onions and garlic, mixed with meaty mushrooms and tangy tomatoes make for a perfect, one pot meal for your busy family.

Lentil Chili


  • 4 pitted medjool dates
  • 3 garlic cloves
  • 3 cups water
  • 2 medium tomatoes
  • ½ can of tomato paste
  • 1 red pepper
  • 1 red onion
  • 2 cups crimini mushrooms
  • 1 cup dry red lentils
  • 1 tsp chili powder (add one more if you like it spicy!)
  • 1 tsp chili powder
  • 1 tsp paprika

30 minutes minutes


  1. Use your blender or food processor to blend dates and garlic in 3 cups of water
  2. Dice red pepper, red onion, and mushrooms, and sauté on medium heat until lightly soft
  3. Add tomatoes and tomato paste to the pan
  4. Add lentils to the pan, followed by your date and water mixture, stir to combine all ingredients
  5. Add spices and salt to taste
  6. Bring ingredients to a boil, then reduce temperature to medium heat for approximately 30 minutes or until lentils are soft and chili thickens, stirring frequently

Serve over a bed of rice or with your favourite bread!
