Vanilla Chai Apple Protein Muffins

Ingredients

 

Dry ingredients:
1 cup organic spelt flour
1 cup almond flour
¼ cup coconut sugar
1 scoop (32.8g)  Whole Earth & Sea 100% Fermented Protein & Greens – Vanilla Chai
1 tsp baking powder
½ tsp cinnamon powder
½ tsp nutmeg powder

Wet ingredients:
2 whole eggs
1.5 cups peeled and finely chopped granny smith apple (approx. 1 large apple)
⅔ cup unsweetened applesauce
½ cup unsweetened almond milk
2 tbsp avocado oil
1 tsp vanilla extract

Topping:
½ cup chopped walnuts
2 tbsp maple syrup (or honey)

Yield

12 muffins servings

Instructions

 

  1. Preheat oven to 375°F. Line 12 muffin tray with liners.
  1. Mix dry ingredients in a small bowl.
  1. Mix wet ingredients in a large bowl.
  1. Add dry ingredients into wet ingredients and mix until just combined. Evenly divide mixture into 12 muffin liners.
  1. Mix topping ingredients in a small bowl so nuts are well coated. Sprinkle on top of each muffin.
  1. Bake for 22-25 minutes. Test doneness by inserting toothpick into centre of muffin. If it comes out clean, they’re ready.
  1. Once done, remove from oven and allow to cool for 10 minutes before transferring to cooling rack to cool completely. Store in an airtight container in the refrigerator for up to 1 week.
