Raw, Vegan Piña Colada Cheesecake

Ingredients
For the crust:
- 1 cup dates
- 1½ cups desiccated coconut
- ½ cup coconut flour
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- A pinch of salt
For the cheesecake:
- 1½ cups raw cashews, soaked overnight and drained
- 1 can (20oz) pineapple rings in juice
- 2 scoops Whole Earth & Sea 100% Fermented Organic Protein & Greens (tropical)
- ¼ cup maple syrup
- 1/3 cup coconut oil, melted
- 1 tsp vanilla extract
- Juice of one lemon
- A pinch of salt
